Olive oil, sesame oil, or walnut oils are the best for salads. When choosing olive oil look for extra virgin oil coming from the first press. This has the most nutrients. Sesame oils are great for Asian type salads. Toasted sesame oil is a tasty choice too. Avoid dressings made with corn oil, soybean oil, or safflower and sunflower oil. These oils while they can help lower cholesterol tend to be more inflammatory in the body. They are called omega 6 fatty acids. Walnut oil is a very light oil and a little goes a long way.
