Bacon & Cheese Meatballs

I was invited to a pot luck party needed to come up with a quick and easy appetizer. My friend told me to make my famous cognac meatballs, but I brought those the last time. I knew he wanted the meatballs so, I needed to come up with something a bit different.

Like a flash, I thought, what about bacon and cheese meatballs. Just like a bacon cheese burger, but without the bread and make it lower fat. I ran to the store and grabbed up the ingredients and whipped it up quite fast. Here's how I made it:

I bought a two pound bag of Amour's pre-cooked meatballs, one can of Campbell's Healthy Request Cheddar Cheese soup, Hormel's Real Crumbled Bacon and Kraft 2% Milk Shredded Colby & Monterey Jack Cheese.

In a large skillet, I emptied the soup and added a can of water. I heated that until it boiled and mixed thoroughly. I then added the meatballs. Continually stirring to completely coat the meatballs. It will look a bit watery, but not to worry.

Using your Magic Bullet or some other similar appliance, take a third of a cup of the crumbled bacon and grind the bacon until it breaks up the chunks and you see it turning to fine dust. Don't worry if you do not have such an appliance. Just put the bacon in a plastic zip bag and pound the heck out of it, but leave some bits in it. The reason why I say to do this is because it allows you to distribute the bacon flavor without adding more than just sprinkling on the bacon. It also gives it a more uniform flavor. Sprinkle the bacon dust on the meatballs stirring constantly to gain even coverage of the bacon flavor.

Now take three quarters of a cup of the shredded cheese and add it a little at a time to the meatballs while continually stirring to evenly coat the meatballs.

Place in a large serving dish with a side of food picks.

It was that easy.
