This is one of my favorite recipes. This is a spin on my black bean brownies. These bite sized treats are gluten free (actually, they are flourless), sugar free and fat free. They are simple and quick to make. The best part is that no will know that they are made with sweet potatoes. The best part is that each bite is low in calories because I took out all the stuff that makes them high in calories. They are also high in Vitamins A, C, B1, 2, 3 and 6. Sweet potatoes are full of anti-inflammatory benefits and have copper, manganese, phosphorus, potassium and lots of fiber, which aid in digestion.

Makes 36 to 40 bites
2 large sweet potatoes
1/2 cup of peanut or almond butter
1/3 cup agave
1/3 cup of cocoa powder
1 TSP baking powder
1 dash kosher salt
2 TBSP water
OPTIONAL: 1/2 cup of semi-sweet chocolate or carob chips
Here's how you make it:
Preheat the oven to 350 degrees and position oven rack to mid-level. DO NOT place rack on the lowest position because the brownies with bake too quick and burn to the high natural sugar content.
Peel the potatoes and cut into 1/2 inch cubes. Place on a sheet pan or cast iron fry pan and roast until soften through, but not mushy. (Alternate method: peel the potatoes and wrap them in paper towel and microwave them according to you microwave directions. They should be soft, but not mushy.)
Once cooled, place the potatoes in a food processor and process until only small chunks remain.
Add the nut butter and process until smooth
Add the cocoa powder, baking powder, salt and water and process until all ingredients are well incorporated.
Add the chocolate or carob chips and process for 10 seconds. At this point, the batter should be firm; a bit firmer than traditional brownie batter.
Using a mini muffin pan, grease and flower the plan or use flour spray to coat the pan.
Using an ice cream scoop or disher fill each cup with mixture.
Bake for 15 to 20 minutes. The sides of the brownies should be firm with a spongy (not moist) center. Bake for an additional 5 minutes if the center is too moist. Do not over bake! The center will continue to bake as they cool to complete the center firmness.
Allow to cool completely before removing from pan.
Alternate pan method: To make tradition style square brownies, just grease and flour or spray a traditional 8X8 pan instead. Bake for 20-25 minutes. Again, do not over bake the brownies. Allow the pan to cool completely before flipping and cutting into squares.
Keep in mind that dark metal pans allow the baking process to speed up so, keep an eye on the baking or reduce heat to 325 degrees.
